Jose Andres’ fast-casual concept is revealed: Beefsteak, a vegetarian restaurant

When you’re as big as José Andrés, you get to open up and test out a brand new restaurant concept on one of the busiest corners in downtown D.C.

On Tuesday, Andrés revealed the fast-casual concept he’s had in the works for some time: Beefsteak, a vegetable-focused quick-serve restaurant. The first location will open at the corner of 22nd and Eye streets NW, in new retail space on the ground floor of George Washington University’s new science and engineering building.

GWU has been seeking proposals for the space for the past several months, and they couldn’t have done better than a concept from Andrés, arguably the city’s most popular chef. The longtime relationship between the two probably didn’t hurt; Andrés has taught courses and offered lectures at the university the past few years.
